Pumpkin Cookie with Spiced Frosting Recipe

I shared about these cookies on Instagram and immediately was flooded with "Please share the recipe!" They are famous in my husbands family. Though I am not certain of the origin, I believe it was invented by his sister during her time at culinary school.


I asked my husband for his family recipe and this is what he gave me! These cookies are my absolute favorite. They're soft and sweet with hint of walnut and spice.

PUMPKIN COOKIES WITH SPICED FROSTING:


For the Cookie:


1/2 c. Granulated Sugar 2 c. Flour

1/2 c. Brown Sugar 1 tsp. Baking Powder

1 c. Butter 1 tsp. Baking Soda

1 c. Canned Pumpkin 1 tsp. Cinnamon

1 tsp. Vanilla 1/4 tsp. Salt

1 Egg 3/4 c. Chopped Nuts


Cream together sugar and butter. Add pumpkin, vanilla, and egg. Blend until smooth. Mix in separate bowl the dry ingredients and then add to the wet ingredients. Drop onto uncreased cookie sheet and bake at 350 F for 10 - 12 minutes.


For the Frosting:


3 tbsp. Butter

1/2 c. Brown Sugar

1/4 c. Milk

1 1/2 to 2 c. Powdered Sugar


In a saucepan, combine butter and brown sugar over medium-high heat, stirring constantly, until it comes to a boil. Then, continuing to stir, add milk and beat until smooth. This will take a little while. Add powdered sugar until consistency is to desired thickness. Spread onto cookies. Let them set up before storing in an airtight container.
